  • General Maintenance Officer

    Your main mission will be to carry out all preventive and curative maintenance and everyday jobs around the hotel. You are skilled in a variety of trades.

He manages and monitors the work of the commis-chefs and apprentices who work under him. With them, he prepares all dishes and tasks assigned to his section.     The Dishwasher is responsible for cleaning all glassware and tableware used during his shift, as well as all kitchen equipment used (pots, pans, utensils, mixers, etc). When there are no dishes to be washed, he helps in the kitchen with basic preparation and cleaning.

He manages and monitors the work of the commis-chefs and apprentices who work under him. Il organise son temps de travail. Il confectionne l'ensemble des préparations culinaires. Aucun plat ne sort de la cuisine sans son approbation. Il veille au respect des règles d'hygiène, et à la propreté de la cuisine.

    Le Chef plongeur est responsable du management des équipes de plonge et de l’approvisionnement en produits d’entretien.

    Avec son équipe, il est en charge d'assurer le nettoyage de la vaisselle et des couverts utilisés lors du service, ainsi que tout la batterie utilisé en cuisine (casseroles, marmites, ustensiles, cuve batteur…).

    Il assure également le nettoyage des locaux de plonge (carrelages et sols, tables de travail, écoulements…) et le débarrassage des poubelles et ordures.
