The person for this role is a true kitchen professional; a former commis-chef who has built up a strong CV through personal commitment to the job. With extensive knowledge of culinary technical skills, recipes and produce, the chef de partie has an instinct for taste and excellence.
Imaginative and creative, he is able to demonstrate initiative and try out new ideas to enrich the hotel’s menu. The chef de partie oversees the supply and quality of the ingredients he requires. He manages and monitors the work of the commis-chefs and apprentices who work under him. With them, he prepares all dishes and tasks assigned to his section. He must approve all dishes before they leave his section. While observing all hygiene regulations, he also has a role in training the apprentices and commis-chefs he supervises. He passes on his knowledge and helps them to improve their skills.
The chef de partie reports directly to the head chef and sous-chefs.
